Feature: Lime Habanero
Dessert:
Lime Tres Leches
Creamy, decadent tres leches and tangy lime curd combine for gooey, sweet perfection!
Yield: about 2 servings
Ingredients
Cake (dry)
- 1/4 cup gluten free flour
- 1/16 tsp (pinch) xanthan gum
- 1/4 + 1/8 tsp baking powder
- 1/16 teaspoon (pinch) salt
Cake (wet)
- 1 egg yolk
- 3 Tablespoons sugar
- 4 teaspoons whole milk
- 1/4 teaspoon vanilla
- 1 egg white
- 1/4 cup sugar
Cake (milks)
- 1/4 cup + 2 Tbsp evaporated milk
- 1/4 cup + 3 Tablespoons sweetened condensed milk
- 1 Tablespoon whole milk
Lime Curd
- 2/3 cup sugar
- 1 Tablespoon lime zest
- 1/3 cup lime juice
- 1/8 teaspoon (1 dash) salt
- 1/4 cup + 2 Tbsp butter
- 4 egg yolks
Directions
Cake
- Mix all dry cake ingredients
- Beat egg yolk and 3 T sugar until pale yellow
- Mix remaining wet cake ingredients except egg white and sugar into egg yolk mixture
- Gently stir dry and wet cake mixtures together until just combined
- Beat egg white until stiff peaks form, slowly adding sugar
- Gently fold wet/dry cake mixture into beaten egg whites
- Pour into small baking dish and bake at 350 F for 35 – 40 minutes, then cool completely
- Pierce the cake many times with a fork
- Mix all milk cake ingredients together, then pour over cake
Lime Curd
- Combine all lime curd ingredients except egg yolks in a sauce pot and cook on medium for 10 minutes
- In another bowl, whisk egg yolks constantly while slowly drizzling in half of the cooked mixture
- Return pot to medium-low heat and slowly mix in egg mixture
- Whisk constantly until curd thickens, then remove from heat
Assembly
- Pour lime curd over tres leches cake and cool to at least room temperature
- Top with whipped cream and garnish with lime habanero to taste
Notes
This dessert is a perfect marriage of flavors that represent our marriage so perfectly: tres leches cake from Celestino’s Mexican background made into a dense, cheesecake-esque crust to satisfy my Eastern European cheesy roots. Topping it is the ooey-gooeyest, perfectly sour, perfectly sweet lime curd to balance the richness of the cakey crust. Eating this cake is the closest explanation of what it’s like for each of us to be married to the other: take one bite and you’ll literally never want to do anything else!!! <3
