Ingredient:
Black Caramel Pralines

These yummy candies are the perfect combination of sweetness, nutty pecans, and je ne sais quoi spices! Add them to something sweet or something savory!

Yield: about 15 candies

Ingredients

Candy Coating
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 3 tablespoons molasses
  • 2 tablespoons butter
  • 1/4 cup half and half
  • 1/8 teaspoon (1 dash) salt
  • 1/2 teaspoon black cardamom
Nuts
  • 1 cup pecans

Directions

  1. Line a cookie sheet with parchment paper and set aside.
  2. Combine all candy coating ingredients in a pot and heat on low/medium.
  3. Stir constantly until the mixture reaches 255°F.
  4. Remove from the heat and beat until the mixture thickens and starts to loose its shine.
  5. Add the pecans and plop small spoonfulls of candy onto the parchment paper-lined cookie sheet.
  6. Let cool either on the counter or in the fridge if you’re impatient!

Notes

If you don’t have black cardamom, please don’t substitute green cardamom! Black cardamom is deliciously smoky, so a substitution that would best preserve the character of these yummy little gems is liquid smoke!

Keep the heat lower than you think and use a pot with a thick bottom, or you’ll risk scorching the candy. If you’re nervous or you have a stove that’s finicky, you might consider using a double boiler. If you don’t have a double boiler, you can make one! Put about an inch of water in any old pot, then find a metal bowl that’s big enough that it’ll sit on top of the pot without falling into it or touching the water. Put the ingredients in the bowl and put the whole shebang on the stove!
